Dinner

Preparing a good dinner; healthy, tasty, and aesthetically pleasing, has become a challenge. Now that we are a full family, Elisabet just arrived home from college, it's my goal to sit down with everyone, at night and have a family dinner. But I do run out of creative ideas. And with a bit of a time constraint I find myself scrambling. Then end result is well worth the effort. I love having a meal together. Sometimes the banter is about politics, sometimes it's just a family squabble, but whatever the topic of conversation it's good to be together.

I bet you laugh a lot at your dinner table! Family dinners are important...but I'm completely unmotivated to cook right now. I've been making do with whatever is around. I'll get inspired again once school is out. If you have any brilliant, easy, quick recipe ideas...send them along please!

"Brilliant" hardly, but easy I can do okay. Here's something that I did last night and it tasted quite good: Take: 12 ripe tomatoes
1/2 c. diced onions
2 garlic cloves
1/2 stick butter
1/4 c. olive oil
1 lb. shrimp
2 c. rice (Basmati)

I sauteed the onions and garlic in butter and olive oil. Then I cooked the tomatoes down and extracted the peels. The tomato sauce should not be overcooked. Add the shrimp and cook until shrimp are tender. Throw the entire goop over the rice and voila!

YUM! I made your recipe for dinner last night. I added capers and some fresh basil. Delicious!

Yum, I love capers. And I do like Basil, good idea.
